The Cinta Senese is a race of pigs which are breed in Tuscany, near Siena, since medieval times, this is demonstrated in the painting by Ambrogio Lorenzetti "Effetti Del Buongoverno" (1338).
It's names derives from the white stripes which run from the top of its neck down to the fore legs, the rest of it is black. The meat is lean and dry and very much appreciated by pig butchers. With the lean part you can obtain very good cold cuts, and excellent ham from the thighs, lard is made from the fat parts, the famous Colonnata Lard.
